Food Waste Management

The resort reduces the amount of waste with composting systems and educates personnel reminding everyone of the waste management philosophy.

  • Composting Systems: the resort uses systems to break down food waste from staff and guests, turning it into compost. This reduces landfill waste and creates useful compost for landscaping and other eco-friendly uses
  • Staff Awareness: screens in staff areas remind everyone to be mindful of food waste, helping reduce waste in both staff meals and food preparation
  • We use technology such as Artificial Intelligence (AI), to minimise waste and improve operational efficiencies in our kitchens, dining rooms and restaurants. Food waste is monitored in the kitchens of the employee dining rooms with overproduced waste, as well as plate waste, monitored through the Winnow monitoring system
